Why Black Beans Are a Superfood
Black beans are not only delicious but also incredibly nutritious:
High in protein – great for vegetarians and vegans.
Rich in fiber – helps with digestion and keeps you full longer.
Loaded with antioxidants – support overall health and fight inflammation.
Low in fat – perfect for a heart-healthy diet.
Ingredients
2 cups cooked black beans (or 1 can, drained and rinsed)
1 medium onion, finely chopped
3 cloves garlic, minced
1-inch piece of ginger, grated
1 medium tomato, chopped
1 cup coconut milk (or low-fat alternative)
1 tsp cumin seeds
1 tsp turmeric powder
1 tsp coriander powder
1 tsp garam masala
½ tsp chili powder (adjust to taste)
2 tbsp olive oil or coconut oil
Salt to taste
Fresh cilantro for garnish
Instructions
Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
Add onions, garlic, and ginger. Sauté until golden and fragrant, about 5 minutes.
Stir in tomatoes and spices (turmeric, coriander, chili powder). Cook until tomatoes soften, around 3–4 minutes.
Add black beans and mix well with the spices.
Pour in coconut milk, stir, and bring to a gentle simmer. Let it cook for 10 minutes so the flavors meld.
Sprinkle garam masala and salt to taste. Stir and cook for another 2 minutes.
Garnish with fresh cilantro and serve hot.
Serving Suggestions
Serve over steamed rice or quinoa for a complete meal.
Pair with roasted vegetables or warm whole-grain flatbread.
Add a squeeze of lime juice for a zesty kick.
Health Tip
This curry is high in plant-based protein and fiber, making it perfect for weight management and supporting a healthy gut. To reduce calories further, use light coconut milk or add more vegetables like spinach or bell peppers.
