Ingredients
For the Cake:
1 cup whole wheat flour or oat flour
¼ cup unsweetened cocoa powder
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
3 tbsp coconut oil or melted avocado
¼ cup honey or maple syrup
1 tsp vanilla extract
½ cup unsweetened almond milk or any milk of choice
2 flax eggs (2 tbsp flaxseed meal + 6 tbsp water) or 2 regular eggs
¼ cup dark chocolate chips
For the Honeycomb Crunch:
¼ cup honey or coconut sugar
2 tbsp water
1 tsp baking soda
Optional Frosting:
½ cup Greek yogurt or dairy-free yogurt
2 tbsp cocoa powder
1–2 tbsp honey or maple syrup
Instructions
Prepare the Cake Batter
Preheat the oven to 180°C (350°F) and line a cake pan with parchment paper.
Mix flour, cocoa powder, baking soda, baking powder, and salt in a bowl.
In another bowl, whisk together coconut oil, honey, vanilla, milk, and eggs.
Combine wet and dry ingredients, stirring until smooth. Fold in chocolate chips.
Bake the Cake
Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out clean.
Let the cake cool completely.
Make the Honeycomb Crunch
In a saucepan, heat honey or coconut sugar with water over medium heat until it bubbles.
Remove from heat and quickly stir in baking soda (it will foam up).
Pour onto a parchment-lined tray and let it harden. Once set, break into small pieces.
Assemble the Cake
Frost the cooled cake with the cocoa yogurt frosting if using.
Sprinkle the honeycomb pieces generously on top for a crunchy finish.
