Ingredients

For the Cake:

  • 1 cup whole wheat flour or oat flour

  • 3 tbsp coconut oil or melted avocado

  • ¼ cup honey or maple syrup

  • 1 tsp vanilla extract

  • ½ cup unsweetened almond milk or any milk of choice

  • 2 flax eggs (2 tbsp flaxseed meal + 6 tbsp water) or 2 regular eggs

  • ¼ cup dark chocolate chips

For the Honeycomb Crunch:

  • ¼ cup honey or coconut sugar

  • 2 tbsp water

  • 1 tsp baking soda

Optional Frosting:

  • ½ cup Greek yogurt or dairy-free yogurt

  • 2 tbsp cocoa powder

  • 1–2 tbsp honey or maple syrup

Instructions

  1. Prepare the Cake Batter

    • Preheat the oven to 180°C (350°F) and line a cake pan with parchment paper.

    • Mix flour, cocoa powder, baking soda, baking powder, and salt in a bowl.

    • In another bowl, whisk together coconut oil, honey, vanilla, milk, and eggs.

    • Combine wet and dry ingredients, stirring until smooth. Fold in chocolate chips.

  2. Bake the Cake

    • Pour the batter into the prepared pan and bake for 20–25 minutes or until a toothpick comes out clean.

    • Let the cake cool completely.

  3. Make the Honeycomb Crunch

    • In a saucepan, heat honey or coconut sugar with water over medium heat until it bubbles.

    • Remove from heat and quickly stir in baking soda (it will foam up).

    • Pour onto a parchment-lined tray and let it harden. Once set, break into small pieces.

  4. Assemble the Cake

    • Frost the cooled cake with the cocoa yogurt frosting if using.

    • Sprinkle the honeycomb pieces generously on top for a crunchy finish.
