Ingredients
1 cup quinoa (uncooked)
2 cups water or low-sodium vegetable broth
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 cup steamed broccoli florets
1/2 cup shredded carrots
1/4 cup red bell pepper, diced
1/4 cup chickpeas, cooked
2 tablespoons olive oil
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt and pepper, to taste
Fresh herbs (parsley or cilantro), chopped
Instructions
Cook the quinoa: Rinse quinoa under cold water. In a medium pot, combine quinoa and water (or vegetable broth). Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.
Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
Assemble the bowl: In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, broccoli, carrots, bell pepper, and chickpeas. Drizzle with the dressing and toss gently.
