Quinoa and Veggie Power Bowl – A Healthy and Flavorful Meal

Ingredients

  • 1 cup quinoa (uncooked)

  • 2 cups water or low-sodium vegetable broth

  • 1 cup cherry tomatoes, halved

  • 1 cup cucumber, diced

  • 1 cup steamed broccoli florets

  • 1/2 cup shredded carrots

  • 1/4 cup red bell pepper, diced

  • 1/4 cup chickpeas, cooked

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon Dijon mustard

  • Salt and pepper, to taste

  • Fresh herbs (parsley or cilantro), chopped

Instructions

  1. Cook the quinoa: Rinse quinoa under cold water. In a medium pot, combine quinoa and water (or vegetable broth). Bring to a boil, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Fluff with a fork.

  2. Prepare the dressing: In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.

  3. Assemble the bowl: In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, broccoli, carrots, bell pepper, and chickpeas. Drizzle with the dressing and toss gently.
